Oskar Cooks ~ Vegetarian Mini Muffins

Vegetarian Mini Muffins
This is an awesome natural dog treat recipe!
1 apple, cored and shredded
2 cups (480 ml) carrots, shredded
⅓ cup (100 ml) molasses
¼ (60 ml) water
1 cup (250 ml) flax seed
¼ cup (60 ml) dry oats
¾ cup (200 ml) whole wheat flour

Combine all ingredients in a large bowl.

If the shredded carrots and apple are too wet, add some extra oats or flour to the mixture until it is a thick batter.

Lightly grease mini muffin tins and spoon the mixture into the compartments until they are about ¾ of the way full and bake for 15 minutes at 400°F (200°C) or until browned.

These freeze very well for a yummy treat any time! These also make great Christmas presents for the other dogs in your life.

These are super yummy, but my mom person says cause they have lots of fat stuff in them they are to be eaten over a long period of time. She freezes them individually and pulls them out for special occasions.

Peanut Butter & Oats Glazed Goodies

1 cup water
1 cup quick-cooking oats
1/4 cup (1/2 stick) butter
1/2 cup cornmeal
1 tbsp. sugar
1 tsp. salt
1/2 cup milk

3 cups whole wheat flour

Boil water in a saucepan. Add oats and butter. Let oats soak for ten minutes.

Stir in the cornmeal, sugar, salt, milk, peanut butter, and egg. Mix thoroughly.

Add the flour, one cup at a time (you may not need the entire amount) until a stiff dough forms.

Knead dough on floured surface until smooth, about 3 minutes. Roll to 1/2″ thickness. Place on a greased cookie sheet.

Glaze:
1 large egg
2 tbsp. milk

Mix well. Brush glaze on dough with a pastry brush.

Bake in a pre-heated 325 degree oven for 35-45 minutes or until golden brown. Cool completely

In honor of two of my favorite schnauzers, JD & Max I’m posting this recipe for birthday cake. Their birthday is coming up & I wanted to post something that their people could make for them that is yummy and pup friendly.

Peanut Butter and Carrot Birthday Cake with Yogurt Frosting

1 cup white or whole wheat flour

1 tsp baking soda

1/4 cup peanut butter

1/4 cup vegetable oil

1 cup shredded carrots

1 tsp vanilla

1/3 cup honey

1 egg

Directions:
Preheat oven to 350°F (180°C)

Mix together flour and baking soda.

Add remaining ingredients and mix well.

Pour into a ring mold sprayed with a nonstick spray and bake for 40 minutes.

Frost this cake with low fat cottage cheese or yogurt and decorate with carrot pieces. Store in refrigerator.

I think this is a great recipe for JD & Max because I know they love carrots & yogurt.

I thought I could share some of my favorite recipes with you. All the mom bloggers do it, so I thought I might as well join in on the fun.

This is my favorite summer time treat.

Oskars Frozen Peanut Butter Yogurt

1-32oz. container of vanilla yogurt
1 cup of peanut butter

1. Put the peanut butter in a microwave safe dish and microwave until melted.
2. Mix the yogurt and the melted peanut butter in a bowl.
3. Pour mixture into cupcake papers and freeze.

When my mom person makes it for me, she ends up eating some of it too, something about quality control she says. Ask your people to make you some, it’s yummy!
